The Vialone Nano rice started its life in 1937 following the mix of two very important rice variants: Vialone and Nano, so called for the reduced height of its plant (in Italian "nano" means "dwarf"). It belongs to the “semifini” category and it has a small, elongated and rounded grain with a good sized amid pearl. Its grain, rich in amylose, offers a consistent ability to grow during cooking offering a unique softness and light product. It is particularly suitable for risotto dishes as it soaks well into sauces. It is loved by many important chefs all over the world for its texture and its capacity to hold its cooking point. These are some reasons why it is considered to be one of Italy’s finest rice used for the production of Risotto in this modern day.
